Aqueous smokes

Applying Zesti^®Smoke on the outside of the product brings colour and flavour. But maybe even more important, it improves the texture of collagen casings by cross-linking of the proteins. Drenching and showering smokes are also available without the emulsifier polysorbate. This avoids foaming during the process and improves the taste.

Zesti^® aqueous smokes for external application can be used for:

• Atomisation, combining a condensate of concentrated smoke with compressed air to form a cloud or fog of smoke in either a hot or cold chamber
• Drenching, immersing the products in a bath of smoke for a short time
• Showering, spraying a smoke condensate on the products

The aqueous smokes are available in different flavours, colours and concentrations. The product can be adapted to your specific product or process.

Release agents
Smoke formulations mixed with a release agent are also used to treat netting for whole muscle meat products.
They transfer smoke flavour and colour and allow for easy release of the netting.
